Today marks the last solar term of summer, "Great Heat," and also the hottest period of the year. Hong Kong has been experiencing days of high temperatures mixed with sudden showers, making the air feel like a sauna.
During the Great Heat period, enjoy dishes made with the following seasonal vegetables:

1. Corn
Corn contains three times the dietary fibre of white rice and is rich in lutein, which is good for eyes. Corn silk can even be made into a dehumidifying tea. The germ contains vitamin E and glutathione, which help combat oxidative stress from summer heat and prevent fatigue and dizziness.
Serving options: Corn and fig vegetarian soup, fresh corn and quinoa salad, or corn silk and barley water.
2. Eggplant
Eggplant is rich in vitamin P, which strengthens blood vessel elasticity and prevents cardiovascular discomfort during summer heat. Its low-calorie, high-fibre properties make it ideal for weight management.
Serving options: Japanese-style yuzu-flavoured eggplant shreds, steamed eggplant with garlic, or braised eggplant with oyster sauce.
3. Pumpkin
Pumpkin contains carotene, which can be converted into vitamin A to protect skin and prevent sunburn. Its high potassium and low sodium content can also help regulate blood pressure, while its natural pectin can slow blood sugar spikes.
Serving options: Pumpkin and millet porridge, steamed pumpkin with garlic, or pumpkin hummus with whole-wheat bread.
